Parapet
A wall carried above the roof line, usually to hide a flat section behind a facade. Its cap and flashing are a frequent and easily missed leak source.
Counter-flashing
The upper metal lapping over the base flashing where a roof meets a wall. Without it, water runs behind the whole assembly.
Barrel tile
The curved profile tile characteristic of older Mediterranean-style buildings here. Fragile underfoot and worth relaying rather than discarding.

Can you keep my original tile?

Usually. Lifting and relaying the existing tile over new underlayment is common on island properties and keeps the building looking as it should.

There is a flat bit behind my parapet I have never seen. Should I worry?

It is worth inspecting. Hidden low-slope sections collect water and debris, and because nobody looks at them, problems there tend to be found late.

Do you work on commercial buildings on the island?

Yes. A lot of the low-slope and parapet work here is on small commercial premises and it uses the same detailing.
